Regarding George W. Barnes:

Below is a web site with an index to biographies in "History of Central 
Oregon" published in 1905.  Click on the name of George W. Barnes to view his 
biography.  It names Elisha Barnes as his father.  It doesn't mention his siblings. 
 It does name his mother as Susannah, which would fit with your census info.  
It also says his father, Elisha, was born in Kentucky and George was born in 
Missouri.  That would also fit with the census of this Barnes family.  George 
was born in 1849, and it says when he was "of age" he took up a homestead near 
Prineville.  That would put him out of the family home around 1870, thus not 
showing up in your census family.  I would conjecture he was the eldest child 
of this family.
